11/14/09 - Cut breasts in halves, 9 min/side was too long
9/06/10 - Marinated chicken for 2 hours, grilled 8 min on one side, 5 on the other
4/05/11 - Used it again; forgot the pepper again
2/25/12 - Marinated all afternoon, cooked using Kabob-It for slightly more than 20 minutes
7/8/2012 - Substituted lemon juice for lime. Grilled on the little Weber for 8 min on one side and 5 on the other.
10/24/2015 - Broiled in the oven, 8 minutes on one side and 7 on the second.
7/27/2016 - Cooked in the microwave using the directions for Kauai Chicken.
2/20/2018 - Used 0.8-lb of thinly-sliced chicken breasts, but the full recipe of marinade. Cooked 5 minutes on one side and 4 on the other, the chicken was a little over done. Served with leftover rice and Acorn Squash with fruit
6/1/2021 - I had two uncooked breasts. I used the recipe’s marinade but added 1/2 teaspoon of ginger powder. Grilled on the Weber for 8 minutes and 5 minutes, they were nicely done and tasted good.
10/29/2023 - I started with 1.7 lbs of chicken, which consisted of a large breast and maybe a half of one. I cut the large one in four pieces and the small one in two. I used the juice of two limes in the marinade, and marinated the meat for about three hours. I grilled it in the oven, with the rack at its highest level, for the recipe times. The thinest pieces were over done.
