Name: Turkey Tortilla Soup
Ingredients:
- 1 teaspoon oil
- 1/2 small onion, diced
- 1 clove garlic, chopped
- 14.5-ounce no-salt-added diced tomato
- 6-inch corn tortilla, chopped
- 1 tablespoon tomato paste
- 1 tablespoon chopped fresh jalapeño, without seeds and ribs
- 1/4 teaspoon ground cumin
- 1 cup chicken broth
- 1 cup chopped, cooked turkey breast or chicken breast
- 1/4 cup crumbled queso fresco or shredded farmer cheese
- 2 tablespoons chopped avocado
Instructions:
- Heat the oil over medium heat in a medium saucepan
- Cook the onion and garlic until soft, about 3 to 4 minutes stirring occasionally
- Stir in the tomatoes, tortilla, tomato paste, jalapeño and cumin
- Cook for 2 minutes, stirring constantly
- DO NOT DO THIS: Process the mixture in a blender until smooth, then return
to sauce pan
- Stir in the broth and turkey meat
- Bring to a boil over medium-high heat
- Reduce heat and simmer for 15 minutes
- Ladle into bowls
- Sprinkle with the queso fresco and avocado
Yield: three bowls
Comments: 7/16/2012 - Used wheat flour tortilla instead of corn, salsa instead
of tomato paste and jalapeño. Did not use blender!
