Name: The Best Lemon Bars
Ingredients:
Instructions:
Comments: 3/5/2017 - I used 8 tablespoons of lime juice in place of the lemons. The
resulting bars were firm and, even though I used cooking spray, they stuck to the pan.
11/7/2017 - I followed the recipe with 2 lemons, but used oil spray on the bottom
of the pan.
The first mixture was somewhat dry
and it took a while to get the bottom of the pan uniformly covered. I baked
this bottom crust for 15 minutes. Everything turned out well - the bars did not stick
to the pan, and they were firm but not hard.
3/14/2018 - Similar to last November, except I had no oil spray but dabbed canola oil
on the bottom of the pan.
6/2/2018 - I had 2 limes that yielded 5 tablespoons of juice and I added
4 more tablespoons from a bottle. I used oil spray on the pan and baked the
bottom crust for 15 minutes.
11/20/2020 - I used 2 lemons, oil spray, and baked the bottom crust for 19 minutes.
Otherwise I followed the recipe.
3/8/2021 - As before, I used 2 lemons for juice and put oil spray on the pan.
I followed the recipe and baked the bottom crust for 17 minutes. The butter softened
after 2 30-sec zaps in the microwave. The prep work before putting the crust in the
oven was 17 minutes.
4/29/2021 - I used two lemons for juice, put oil spray on the pan, added
a tablespoon of water to the crust mix, and baked the crust 15 minutes.
9/7/2024 - I used two lemons for juice, put oil spray on the pan, and followed
the recipe for everything else. They were eaten at a UUCC potluck.
