Name: Red Cabbage & Bacon Pasta
Ingredients:
- 1 jar (16 oz.) Aunt Nellie's Sweet & Sour Red Cabbage, undrained
- 1 tablespoon olive oil
- 1/2 cup yellow onion wedges (1/2-inch thick)
- 2 cloves garlic, minced
- Salt and pepper
- 3/4 lb. chicken breast, cut into 2-inch chunks
- 2 tablespoon Dijon mustard
- 4 cups cooked linguine
- 2 slices bacon, cooked & crumbled
- 1 tablespoon chopped fresh parsley
Instructions:
- Heat oil in skillet on medium.
- Add onion and garlic and cook 1 minute, stirring frequently.
- Add chicken pieces
- Cook 5 to 7 minutes until browned and cooked through, turning occasionally.
- Season with salt and pepper, as desired.
- Add red cabbage with liquid and mustard to skillet and stir to combine.
- Simmer 7 minutes until mixture starts to thicken.
- Arrange pasta on 4 plates.
- Top with chicken and red cabbage mixture.
- Sprinkle with crumbled bacon and parsley.
Yield: 4 servings
Comments: 5/17/2025 I had 1.23 lbs chicken and did not use any
bacon or parsley. I browned the chicken for 7 minutes. I omitted the extra
salt and pepper. I served it with 12oz farfalle,
Garlic-roasted Broccoli
with Parmesan Cheese,
and a green salad.
