Name: Pineapple Crisp

Ingredients:

• 2 (20 ounce) cans crushed pineapple, drained
• 1 cup all-purpose flour
• 1 cup brown sugar
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 egg
• 1/2 cup butter, melted
• 1 teaspoon ground cinnamon

Instructions:

• Preheat oven to 350ºF (175ºC).
• Spread well-drained pineapple into a 9x9 inch square baking pan.
• In a medium bowl, mix together flour, sugar, baking powder, salt and egg until smooth.
• Spoon mixture evenly over pineapple.
• Pour melted butter over mixture and then sprinkle with cinnamon.
• Bake in preheated oven for 40 to 45 minutes. Serve hot or cold.

Comments: 7/10/2021 - I had a can of crushed pineapple and one of pineapple chunks. I did my best to crush the chunks. The desert could have fit in an 8x8 baking pan. I baked it for 40 minutes.
5/15/2022 - I used the 8x8 inch glass baking pan. One of the cans of pineapple was hard to drain so the filling came out juicy than intended. The fruit is too acid for Gail’s stomach so she can’t eat it just before bedtime.
