Name: Mushroom and Tomato Stir Fry
Ingredients:
- 8 oz mushrooms, sliced (white button or cremini work best)
- 2 medium tomatoes, cut into wedges
- 4 cloves garlic, roughly chopped
- 1 tablespoon cooking oil (neutral, like canola or avocado)
- Salt, to taste
- 1/2 teaspoon sugar
- 1/2 teaspoon sesame oil
Instructions:
- Heat oil in a large skillet or wok over medium-high heat.
- Add garlic and stir fry for about 30 seconds until fragrant.
- Add mushrooms and cook for about 2 minutes, stirring occasionally.
- Add tomatoes and stir fry with mushrooms for 1 minute.
- Cover and cook for another minute.
- Uncover, add salt, sugar, and sesame oil.
- Stir fry until the mushrooms and tomatoes are tender.
- Remove from heat and serve hot as a side dish.
- For extra flavor, sprinkle with chopped green onions or cilantro before serving.

Comments: 10/8/2025 - I followed the recipe loosely and made
a smaller amount. I used a mixture of lion mane and white button mushrooms.
I omitted the sugar and the salt.
