Name: Macaroni and Cheese NAMI-style
Ingredients:
- 12 oz uncooked elbow macaroni
- 4 tablespoons grated onion
- 2 teaspoons salt
- ½ teaspoon pepper
- 4 cups shredded sharp Cheddar cheese (about 1 1/2 lbs)
White sauce
- 4 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- ½ teaspoon pepper
- 4 cups milk
Instructions:
- Preheat oven to 375ºF
- Cook macaroni in 4 quarts of boiling water for 7 to 10 minutes
- Melt butter in saucepan over low heat to prepare white sauce
- Blend in flour, salt and pepper
- Cook over low heat, stirring until mixture is smooth and bubbly
- Remove from heat and stir in milk
- Heat to boiling, stirring constantly
- Boil for one minute and then remove from heat
- Place half the cooked macaroni in an ungreased pan
- Sprinkle with half of the onion, salt, pepper and cheese
- Repeat with the remain half of the macaroni
- Pour the white sauce over the casserole
- Dot with extra butter
- Bake covered for 30 minutes
- Uncover and bake 15 minutes longer
Yield: Serves 10
