Name: Crockpot Taco Soup

Comments: 1/28/2014 - I added some onions and mushrooms to the ground beef, and served it with tortillas and yogurt instead of tortilla chips and sour cream. It was mild flavored so we added hot sauce.
1/28/2014 - I substituted 10-oz of Tex-Mex Jack Fruit and 12-oz of Light Life Smart Ground Crumbles for the ground beef and 1 cup of frozen white shoepeg corn for the canned corn. I sautéd 1/2 yellow onion in canola oil before cooking the jack fruit for 5 minutes and the crumbles for 4 minutes. For seasoning, I used about 4 teaspoons of the homemade taco seasoning added about 5 hours after starting the crockpot. I served it with shredded cheddar cheese, sour cream, and sourdough bread. The flavor was good.
