Name: Beef Liver and Onions
Ingredients:
- 2 lb Beef Liver
- 2 Vidalia Onions, sliced into rings
- 4 Tablespoons Butter (divided)
- 2 cups Flour
- 1 Tablespoon Salt
- 1 teaspoon Pepper
- 1/2 teaspoon Paprika
Instructions:
- Add 2 tablespoons of butter to a medium-large skillet and heat over medium high heat.
- Add the slices of onion rings and sauté until caramelized.
- Once they are golden, remove from heat, and wrap in foil to keep warm.
- While the onions are cooking, combine the flour, salt, pepper and paprika.
- Dredge the liver in the mixture and set aside.
- Once you have removed the onions from the pan, melt the remaining 2 tablespoons of butter in the pan and then add the coated liver.
- Cook over medium-high heat, flipping once for 3 minutes per side.
- Remove once done, and do not overcook the liver.
- Serve the liver with mashed potatoes, gravy, and the caramelized onions on top.

12/15/2021 I used 1 pound of beef livers, 1 sweet onion, 1 cup of flour,
a tablespoon of salt-substitute in the recipe. I
soaked the liver in a bowl of
cold water with a tablespoon of real salt while preparing the gravy and mashed
potatoes. I used the electric skillet, starting with the setting at 350º
but the onions were blackening so I reduced it to 300º. I cooked the
liver quickly, perhaps a minute or slightly more a side. It was cooked through
and still tender at the table.
