Name: Sautéed Pearl Onions And Mushrooms With Garlic Butter
Ingredients:
- 2 tablespoons butter
- 1 tablespoon extra virgin olive oli
- 2 cloves garlic (minced)
- 1 tablespoon thyme (leaves picked)
- 12-14 button mushrooms (rinsed, dried and stems removed)
- 10-12 pearl onions
- 1/2 teaspoon paprika powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup arugula
Instructions:
- Preheat oven to 450ºF.
- In an oven-safe frying pan over medium heat, add 1 tbsp butter, extra virgin olive oil, garlic and thyme and cook for one minute.
- Add mushrooms and pearl onions flat in the pan and cook for 7 minutes, until onions are beginning to soften.
- Place the pan in the center of the oven and roast for 15 minutes, until onions are tender.
- Take the pan out of the oven, add paprika, salt, pepper and remaining butter and gently toss.
- Top with arugula and roast for another 3-5 minutes, until arugula has completely wilted.
- Serve immediately.
Yield: 4 servings
Comments:
1/14/2026 - I used 8 pearl onions and 11 mushrooms. I could have used more onions.
I substituted 2 teaspoons of garlic powder for the 2 cloves, and I used a tablespoon of
basil in place of arugula. It was too salty. We ate it as a side dish in one meal.
