Name: Cucumber, Avocado and Asparagus Salad
Ingredients:
- 2 medium size cucumber
- 1 avocado
- 6 stems of asparagus
- 2 slices of prociuto
- 1/4 cup roasted pistachios
- 1 Sprig fresh dill
- Splash black truffle oil
- Coarse sea salt and pepper to taste
- 1 tablespoon fresh lemon juice
- 6 leaves fresh mint
Instructions:
- This salad is built on the plate in which it will be serving.
- Slice the cucumber, asparagus, avocado, mint and dill
- Take two plates and start placing in the middle cucumber first.
- Then randomly place asparagus and avocado.
- Add prosciutto and roasted pistachios on top.
- Garnish with mint and dill.
- Drizzle fresh lemon juice and truffle oil over the salad.
- Finish with the sea salt and black pepper
Yield: 2 servings
Comments:
3/26/2025 - I made this as a side-salad, not as the main dish. I used
1 cucumber, 1/2 avocado, leftover asparagus from the Asparagus Salad,
and juice from 1/2 lemon. I omitted prociuto, pistachios, dill, truffle oil, salt,
pepper, and mint leaves.
